Cook Time:
This is a traditional way to prepare any kind of chiles or peppers for immediate use in cooking or for freezing for later use. As with many old-timey ways of doing things, it can be labor intensive. If you are not making poppers the seeding goes faster when you can cut open the pepper. Totally worth it - the flavor can't be beat!
Directions:
1
Wash peppers and dry on paper towels.
2
Cut off tops.
3
Pack tightly into shallow pan.
4
Broil 5-10 minutes - until skins start to blister and brown.
5
Turn 1/3; broil 5-10 more minutes.
6
Turn 1/3; broil 5-10 more minutes.
7
Let cool slightly.
8
Place peppers in large plastic bag(s).
9
Let sit to steam at least 1/2 hour.
10
Put on surgical gloves if peppers are spicy hot.
11
Peel the peppers.
12
Carefully remove the innards. As small skinny knife is useful.
13
Optional - fill with your favorite cheesy filling.
14
Freeze untouching in layers overnight.
15
Place in freezer bag for later use.
16
I use the toaster oven - its tray fits 24 jalapenos.
