Easy Split Pea and Barley Stew

"This is a very easy and wholesome recipe that I adapted from hillbillyhousewife.com. It is extremely economical and filling, as well as being healthy. I serve this with a small green side salad and a loaf of fresh or garlic bread."

  • Saute the onion in the oil until fragrant.
  • Add the celery and carrot. Continue to saute until the whole lot is beginning to soften and smell aromatic.
  • Tip in the barley and split peas. Add 8 cups of water, reduce heat, and allow to simmer for about 40 minutes or until the legumes and grains are beginning to become tender.
  • Add the tomatoes and puree. Stir and allow to simmer for another 20-30 minutes to allow flavours to meld. If it looks as if it is drying out, add a cup of water.
  • Season to taste before serving.

  1. Easy, high fiber, healthy meal. I used vegetable stock instead of water and added 3/4 teaspoon of Tony Chachere's Original Seasoning to kick up the flavor a bit.
     
  2. This was a very easy and yummy soup. I did use the ketchup and I felt it gave it added flavor. I also had some herbs as I felt it was a little bland without it. Nice for a cold, rainy evening.
     
  3. This is very good! I used a can of Italian tomatoes because I couldn't find the diced tomatoes I bought for this. And I used ketchup. My 11yo son has had a couple bowls of this, and I thought I might be eating it all by myself. So that's great! Reviewed for Healthy Choices ABC tag.
