I found this in the Biggest Loser 30 day jump start book - thanks for posting so I didn't have to! I could not believe there was not any salt in this chili - I didn't miss it a bit. In my case, I didn't have pinto beans on the shelf so I used blackeyed peas instead and I didn't have any black olives but I didn't miss them either. I personally like onions but even I was a little concerned that 3 cups was a bit much yet I didn't think so when I started to eat this. What a great light and filling recipe! Again, thanks for posting!

This is really yummy, and quite versatile to boot! I have never made chili w/ meat, so I used only 1/2 lb ground turkey and added a cup of chopped zucchini to replace the bulk and sneak in a veggie! I also skipped the garnishes and just served w/ cornbread. This has a great "kick" (due to the mustard, perhaps?) that warms but doesn't overwhelm. My 12 month old DS ate almost as much as his mama! Thanks for posting a keeper! Made for Healthy Choices ABC tag.
