Delicious Quick Pasta & Sauce

Quick, easy, kids like it--tomato sauce, fresh basil, cheese. I made this for the first time tonight, have been neglecting the groceries. I made this from what I had in the kitchen. It was delicious, my 4 year old liked it too!

• Total Time: 30 mins
• Prep Time: 10 mins
• Cook Time: 20 mins

Ingredients:

Servings: 2

• 2 teaspoons olive oil (good extra virgin preferred)
• 1 medium onion , finely chopped
• 2 garlic cloves , minced
• 1 (8 ounce) can tomato sauce
• ¼ teaspoon salt
• 1 teaspoon thyme
• ½ teaspoon red pepper flakes
• 1⁄8; cup fresh basil leaf , chopped
• 1⁄8; cup mozzarella cheese , shredded
• 1⁄8; cup monterey jack cheese , shredded
• 1⁄8; cup cheddar cheese , shredded
• parmesan cheese
• ½ lb pasta , prepared per package directions (small pasta, shells, elbows, etc)

Directions:

1. Heat oil over medium-high heat.
2. Add onion sauté until fragrant (2-3 minutes).
3. Add garlic, cook 3-4 minutes more, stirring often to prevent browning.
4. Add tomato sauce and dry spices.
5. Reduce heat to low, cover and simmer for 10 minutes, stirring occasionally.
6. Remove from heat, add cheeses, stir gently until melted.
7. Add basil.
8. Pour over prepared pasta, toss to coat.
9. Top with parmesan cheese.
10. Serve with hot bread.

This was fabulous! It was easy to make and had a beautiful presentation. I put it in a classy serving bowl and saved some of the fresh basil to put on the top as garnish. Kids loved it, and ate a ton!

I didn't have any sauce on hand, and needed something I could make quickly. I used dried basil and left out the jack cheese. No complaints from the kiddos, but if I am using it to feed all six of us again, I would double it. It wasn't quite enough for everyone. Overall, very good! Thanks for posting.

I actually made this for my 1 1/2 year old son tonight, I took a bite and WOW! I wasn't expecting it to be so good! I think it's the cheeses that threw it over the top. I loved it so much that I got a bowl for myself. The only change I made was to add dried basil instead of fresh (I know, I know, but I didn't have any) Well, it was great anyway. Thanks Er Be3!
