Curried Rice

The curry adds a great color and a wonderful flavor to the rice. Serve with any grilled or roasted meats.

• Cook Time: 20 mins

Ingredients:

Servings: 4

• 1 tablespoon butter
• 1⁄3; cup onion , finely chopped
• 1 garlic clove , minced
• 1 tablespoon curry powder
• 1 bay leaf
• salt , to taste
• fresh ground black pepper , to taste
• 1 cup uncooked rice
• 1 ½ cups chicken broth (low-sodium canned or homemade)

Directions:

1. Heat butter in a saucepan. Add the onion and garlic. Cook, stirring, until soft. Add the remaining ingredients, except the chicken broth, stirring to coat grains.
2. Add the chicken broth. Cover. Bring to a boil. Reduce heat. Cook 15 to 20 minutes, until rice is tender. Remove the bay leaf and serve.

Good stuff ! Ate with grilled curry seasoned chicken quarters. Would be good with a grilled chopped chicken breast on it too wrapped in a tortilla or pita - I will make some curry-mustard sauce to go with it next time around !
