Curried Carrot Soup

- 1 garlic clove, minced
- 1 onion, chopped
- 9.85 ml olive oil
- 2 stalk celery, chopped (optional)
- 907.18 g carrots, chopped or 907.18 g sweet potatoes
- 1419.54 ml vegetable broth
- 9.85 ml curry powder
- 4.92 ml lemon juice or 236.59 ml apple cider
- salt and pepper
- 14.79 ml yogurt or 9.85 ml cilantro leaves
directions
- Saute onion and garlic and celery in 2 teaspoons olive oil in large soup pot.
- Add carrots or potatoes, vegetable broth, and curry powder and bring to boil.
- Simmer until carrots are tender, about 20 minutes. Remove from heat, cool slightly, and puree.
- Add lemon juice or cider and salt and pepper to taste and stir well.
- Serve with yogurt or cilanto leaves as garnish.
