- 1 medium onion, chopped
- 3 carrots, thinly sliced
- 2 stalks celery, thinly sliced
- 4 garlic cloves, minced
- 1⁄2 teaspoon ground cumin
- 1 1⁄2 teaspoons dried basil
- 1⁄2 teaspoon chili powder
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon Tabasco sauce
- 2 (16 ounce) cans black beans, drained and rinsed
- 1 (14 1/2 ounce) can crushed tomatoes
- 2 (14 1/2 ounce) cans broth
- 1 1⁄2 cups cooked brown rice
directions
- Combine all ingredients except rice in crockpot.
- Cover and cook on low 8 to 10 hours (high 3 to 4 hours).
- Add cooked rice before serving.

I kept tasting the broth while it was cooking and it was bland, I was a little worried! It turned out delicious!! I doubled the recipe (tripled the spices), used ancho chili powder and chipotle Tabasco, low sodium veggie broth but I added a little no-chicken bouillon paste, added in brown basmati rice and served topped with Daiya cheddar "cheese". Yummy! Thanks for posting!
