Excellent side to any tex-mex meal. Mouth-cleansing and spicy, but not toooooo spicy.

- 2⁄3 cup fresh cilantro, loosely packed
- 1⁄3 cup chopped onion
- 1⁄4 cup chopped scallion
- 1 jalapeno (or to taste)
- 1 tablespoon lime juice
- 1 teaspoon olive oil
- 2 -3 cups cooked rice
- Mix all above ingredients except rice in food processor or blender.
- Combine with cooked warm rice.
- And kosher salt to taste.
