- 1Cut woody ends from asparagus.
- 2Combine water, juice, salt and red pepper in the bottom of an asparagus steamer or other vessel large enough to steam whole asparagus. Bring to a boil.
- 3Place asparagus in steamer basket and place basket into pot. Cover, reduce heat to a simmer and steam until crisp-tender. Time will vary depending on thickness of spears, size of cook pot and preferences of chef. Check at 5 minute intervals -- careful! Steam is hot!
- 4Remove spears and refrigerate until cold. Dust with zest just before serving.
