Chili Cookoff Winner

"this is my chili recipe. it won the "people's choice" award last year at a superbowl party. it is a little spicy - but not too hot to enjoy. add cooked ground meat if you like, but i like this without. it is also nice to top it with chopped fresh jalapeno peppers. also - i use all organic ingredients. if you live near a trader joe's market, they sell all of these ingredients in organics for less money than the regular items cost at most grocery stores."

  • Combine all ingredients in a crock pot or a 4 quart (or larger) pot on the stove.
  • Cook over medium heat (or high if using a crock pot) until hot.

  1. This is really good chili. :) I made half the recipe and used 1 can black beans and 1 can kidney beans instead of 1/2 can black beans and 1 1/2 can kidney beans. I cooked it for 3 hours in my crockpot on high and it turned out really nice. I wasn't sure if I should drain all of the cans, but I did except for the can of diced tomatoes. Thanks for a nice recipe! Made for the August Photo Challenge - Crock Pot Cooking.
     
  2. Made this for a potluck where I didn't know the other people. Only change: onion to a bag of frozen fajita mix (strips of onion & sweet peppers, which I chopped while still frozen). I served with light sour cream, hot sauce & thinly sliced scallion. Was a big hit & I directed a few people to website for this recipe. Made it again for my brother's Superbowl bash, but used 1 minced chiptotle in adobo, instead of cayenne. (They don't like a lot of heat.) Added bacon cornbread as a side. Again, raves; the smokiness is a great addition. I put this last version into my "meals for lazy days" rotation. I like to cook 1 lb of dry beans just to have them around, and usu. have at least 2 kinds in the fridge, so this is super easy for me. I recommend gordita corn tortillas or whole grain corn bread as a side. Thanks for sharing the recipe!
