Butternut Squash Fries

5oz.fries= 65 calories, 0g fat, 6mg sodium, 16.5 carbs, 4g fiber, 3g sugar, 1.5g protein
Directions:

Pre-heat oven to 425 degrees.

Peel and de-seed your butternut squash. Slice squash in half.

Cut it up into french fry shapes.

Place on a cookie sheet sprayed with non-stick spray. Cover lightly with kosher salt.

Place tray in your pre-heated oven and bake for 40 minutes or so, flipping halfway through baking process.

Fries are done when they are starting to brown on the edges and get crispy.

Serve with ketchup or syrup if desired.

These were a bit strange to get used to, only because my brain thought sweet potato when I saw them, but my mouth said squash when I ate one! Once I got past that, I really enjoyed them. I usually only make pureed butternut squash, so this was a nice change. My husband really liked them, but unfortunately my children were not fooled. They know a squash when they taste it, even if it looks like a fry! Oh well. Some day they'll eat their veggies :o) Thanks for a fun and different squash recipe!

Very good. Some were not crisp, but I guess that's why it's called squash. Good alternative to regular fries.
