Bulgarian Potato Salad

A simple potato salad and easy to put together.
Directions:

In a salad bowl - add the finely chopped spring onions, salt, pepper to taste, the lemon juice and olive oil, and mix gently.

Cut the potatos into cubes and add the the salad bowl.

Gently mix, sprinkle with parsley or dill if you serve the salad with fish.

I really prefer oil potato salads to those with mayo. They just have better flavor and this super simple recipe is proof. It will be a good side with a sandwich, bbq or anythink you like. I used flat leaf parsley.

These are the type of potato salads I like with fresh ingredients and without the heaviness of mayonnaise. Perfect for summer picnics! Used locally grown white potatoes and fresh herbs from the garden. Reviewed for Veg Tag August.
