I love salads! I love Boston lettuce, too. Give this one a try. It's refreshing and different. If you can, make the dressing several hours ahead or the day before so the flavors can blend.
To prepare dressing: Whisk mayonnaise and mustard in a small bowl. Slowly whisk in orange juice until smooth. Stir in shallot. Season with pepper.

To prepare salad: Divide lettuce among 4 plates and scatter carrot and tomatoes on top. Drizzle the dressing over the salads and sprinkle with tarragon (or chives), if desired. Serve immediately.
This is wonderful salad! I didn't have the little tomatoes, but I did get some beautiful Beefsteak tomatoes at Sam's Club, so I used them. I had a little red cabbage, so I shredded that, it made the salad really beautiful. Re: the comment by another member puzzled me. To make it a little more "orange-y" would have been simple. Just add a little more to the mix... Oh well..Thanks for another winner hon!

Very refreshing. I wished that the orange had come through a bit more though. I did use fresh squeezed juice. Also, I had to use up a couple of vine ripened tomatoes, so used them instead. I used the optional snipped chives as my garnish. Made for Every Day Holiday Tag. :)
