  • Make a simple syrup combining sugar and water in heavy saucepan; bring to a boil over high heat; reduce to medium-low heat and simmer, stirring until sugar has dissolved (6-8 minutes)-(** This step can be made ahead and kept refrigerated until ready to use).
  • Cool completely.
  • Combine blueberries, simple syrup and juice from 2 fresh lemons in food processor.
  • Puree until smooth.
  • Transfer puree to ice cream maker freeze according to manufacturer's instructions.
  • Put into freezable container and place in freezer until firm.
  • Makes 1 quart.

  1. I agree with Logically Locked...definitely too sweet. That may have been partially due to some amazingly sweet blueberries...the best Ive had in years. While it was churning I tasted it and decided to turn it into sherbet and cut the sweetness. I added about 1/3-1/2 cup of heavy cream and its awesome.
     
  2. The flavor of this sorbet was really good, but it was SOOOO SWEET. I think next time I'll cut the sugar a bit. I served this semi hard over the top of vanilla ice cream instead of just eating it by itself and it was really great.
     
  3. Incredible flavor-easy recipe! I simmered the blueberries in the simple syrup (I think this intensifies the flavor) before cooling it. Once cool I added the lemon juice and put it all in the blender. It froze to a great consistency in my ice cream maker and was a big hit with my family. My aunt said it was the best sorbet she has ever tasted!
     
  4. This is amazing. I used brown sugar and fresh berries. My children had it for lunch and begged me to make more for dinner!
