  • Sauté onion in oil with cumin, and salt until onions are translucent.
  • Add garlic.
  • Add beans, corn, and bay leaves.
  • Let cook 10 minutes.
  • Serve over rice with cilantro sprinkled on top.

I live in the green, green hills of western Massachusetts with my sweet girl and nutty husband and that makes me smile alot. I am a teacher by day (very young children 0-3) and run a tattoo shop (with my husband) by every other minute which allows for a life full of laughter art adventure but not much sleep! As a family we work hard to have a sit down all together talk about your day dinner every night and I truly believe its what keeps us sane. Good food, good company, good times!
