I found this recipe on a different site a few years ago and love how it makes plain black beans a little more special and a lot more tasty. It is so quick to make and is a great side for your Mexican dishes.
- In a medium saucepan, combine beans, onion and garlic and bring to a boil.
- Reduce heat to medium-low and add cilantro, cayenne, and salt.
- Simmer for 5 minutes and serve.
Great side dish - made to go with chili marinated steaks and brown rice. I substituted coriander for the fresh cilantro and served the beans with slices of avacado. I will be making these often - Thanks for the quick, tasty recipe.
Very easy and very tasty. I didn't have cilantro (I rarely do), so I substituted 1 tsp. ground coriander. This is a nice side to a Mexican dish, I served these with Always Delicious Chicken & Cheese Enchiladas, and it was an amazing dinner. Thanks for posting this recipe. Made for Fall 2009 PAC.
