  • Combine all ingredients in 2 quart glass casserole.
  • Mix.
  • Microwave covered 5 minutes Then microwave 35- 45 mins at 50% power til liquid is absorbed and rice is tender.
  • Let stand 5 mins.

  1. This recipe was just ... okay. It wasn't HORRIBLE, but I guess it didn't work too well for me. I had to add a lot more water than called for, and the vegetables sort of "wilted" anyway. The flavor was rather flat, too, despite what I thought was quite a large amount of herbs. And it yields more like four small servings; if it's supposed to serve eight, then those are about two-tablespoon servings! It's a nice idea, though. Thanks for posting.
