Baked Sweet Potato With Topping

"The Toledo Blade credits ARA Content for this recipe. I don't know who they are, and I haven't made this recipe, but it sounds good and is different than anything else on Recipezaar. Recipe may be doubled."

• Yields: 1 sweet potato
• Serves: 1

ingredients

• 1 fresh sweet potato
• 14.79 ml pure maple syrup
• 14.79 ml raisins
• 9.85 ml sunflower seeds
• salt and pepper

directions

1. Preheat oven to 400 degrees. Foil line baking sheet.
2. Prick potato with fork. Place on baking sheet and bake one hour or until very tender.
3. Split sweet potato and top with remaining ingredients.
4. NOTE: Potato may be microwaved instead. Try eight minutes, rotating potato after four for even cooking.

Very tasty! I used parchment paper instead of foil. It sure perks up the sweet potato! Made for PAC Spring 2012.
