    Directions:

      In a medium bowl, combine green onions, shallots, garlic, ginger, allspice, black pepper, chile peppers, cinnamon, nutmeg, salt, brown sugar, orange juice, vinegar, wine, soy sauce, oil, and molasses.

      Mix well, cover, and allow to sit for 1 hour.

      Stir again before using with fish or meat.

      This should make enough for about 2 different meals.

      Discard any remaining sauce after marinading meat.

      Sorry I couldn't give this the 5-star rating. As prepared, the sauce itself was great, however, it lost something from preparation to actual usage. I marinated a burger for about 4 hours. Grilled up nicely, but the taste, to me, was unattractive. Still, thnx for taking the time to post. Made for Comfort Cafe Summer 2009.

      I once again looked for scotch bonnet peppers - I don't think we have them here in my part of Maine, lol. I subbed about 1/2 of a habanero, seeded and minced fine, fine, fine. I guess I was expecting more of a thicker sauce than a marinade but really enjoyed the flavor. I marinated some burgers for about 30 minutes, and would definately let the meat marinate for longer next time. I ended up serving some of the marinade on the side to dip my burger in, it was yummy! I think chicken would be perfect for this and will give it a try, I have a bit left over. This is really easy to put together and highlights the flavors of the Caribbean. Thanks LL!!       *Reviewed during ZWT5 Caribbean visit for the Zaar Chow Hounds* I made the recipe as stated, except for cutting bakc on the peppers (my kids dont like hot foods). The sauce smelt wonderful and tasted full of flavour. Very easy to put together Photo also being posted
